Smashed Potatoes

  1. Boil potatoes until fork tender
  2. Drain and let cool
  3. Heat griddle to low
  4. Melt ghee on griddle
  5. Place potatoes on griddle and smash with a spatula
  6. Season with salt and pepper
  7. Every 10 minutes add more ghee under potatoes
  8. Flip potatoes after 40 minutes
  9. Cook for another 10 minutes
