Shrimp Scampi

- 1 pound pasta
- 4 tablespoons butter
- 4 tablespoons olive oil
- 2 shallots, finely diced
- 2 cloves garlic, minced
- red pepper flakes
- 1 pound shrimp, peeled and deveined
- salt and pepper
- 1/2 cup dry white wine
- 2 tablespoons lemon juice
- 1/4 cup finely chopped parsley leaves
- Prepare pasta by boiling.
- Add 2 tablespoons of the butter and 2 tablespoons of the olive to a large heated skillet.
- Saute the shallots, garlic, and a pinch of red pepper flakes until fragrant and shallots are translucent.
- Season the shrimp with salt and pepper and and them to the pan and cook until opaque.
- Remove the shrimp and set aside.
- Add the lemon juice and wine and bring to a boil.
- Add the remaining olive oil and butter.
- When the butter has melted return the shrimp to the pan.
- Add the parsley and pasta to the pan.
- Stir everything together.
- Season with additional salt and pepper, if needed.
