Pork Carnitas
main- 1 whole pork butt/pork shoulder
- 1 onion (cut into large chunks)
- 6 colves of garlic (chopped, add extra if you want!)
- 2 medium sized oranges (halved)
- 3 limes (halved)
- 1.5 tsp salt
- 2 tsp black pepper
- 2 tsp red pepper flakes
- 2 tsp dried oregano
- 1 tbsp ground cumin
Optional:
- 1 package corn tortillas
- Fresh cilantro
- Thinly sliced radish
- Pickled red onion
- Preheat oven to 300°F
- Combine salt, black pepper, red pepper flakes, dried oregano, ground cumin into a small bowl to make a spice mixture
- Coat the pork in the spice mixture and place it into a large dutch oven or oven safe pot
- Squeeze the oranges and limes into pot and place the spent halfs into the pot around the sides of the pork
- Put the chopped garlic and onion on top of the pork
- Cover the pot and bake for 1.5 hours
- Remove the pot from the oven, and place it on a baking sheet. Using a fork and/or tongs shred teh meet into small pieces.
- Ladle ~1 cup of the left over liquid in the pot over the shredded pork
- Put the shredded pork in the oven and broil for 8 minutes (or until desired crispyness) flipping half way through
- Optional: While the pork is crisping in the oven warm tortillas in a pan on the stove
- Optional: Serve pork on tortillas with cilantro, pickled red onion, radish or your favorite condiments
