Old Fashioned Coffee Cake

  1. Mix flour, white sugar, and salt in a large bowl until blended.
  2. Add the butter and cut in with a whisk, should resemble course crumbs.
  3. Remove 1 cup of the flour mixture to a separate bowl and set aside.
  4. Add the baking powder and baking soda into the remaining flour mixture.
  5. Add the yogurt, egg and vanilla and mix until smooth.
  6. Scrape batter into greased 10-inch springform pan.
  7. Add the brown sugar, cinnamon and nuts (optional) to the reserved flour.
  8. Sprinkle the crumbs over the batter pressing lightly.
  9. Add halved maraschino cherries to the top of the crumb.
  10. Bake at 350 degrees for 50-55 minutes, until a toothpick inserted into the center comes out clean.
  11. Transfer to cooling rack for 2 hours.
