Mushroom Cutlets
main- 1 lb fresh mushrooms, finely chopped
- 1 tablespoon butter
- 1 onion, chopped
- 6 hard rolls (mashed potatoes may be substituted)
- 1 tablespoon parsley
- 3 eggs
- 1 tablespoon bread crumbs
- Salt and Pepper
- Fry mushrooms in butter with onion and parsley.
- Moisten hard rolls and squeeze dry.
- Add eggs and bread to mushrooms.
- Season to taste.
- Make small cutlets in the palm of your hand.
- Dip in bread crumbs and fry in butter.
