Dutch Baby

- 2 tablespoons butter
- 3 large eggs
- 3/4 cup whole milk
- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/2 lemon, optional
- Fresh berries, optional
- Powdered sugar, optional
- Place a large cast iron skillet in an oven preheated at 425 for five minutes.
- Combine eggs, milk, flour, granulated sugar, vanilla, and salt in a blender.
- Blend until frothy, about 60 seconds.
- Melt butter in heated cast iron skillet.
- Pour batter into hot skillet.
- Bake until puffy and golden, about 20 minutes.
- Top with a squeeze of lemon juice, berries and powdered sugar.
