Armenian Perok Cake

- 2 sticks of softened butter
- 1 cup sugar
- 1 whole egg
- 2 egg yolks
- 1 tsp vanilla
- 1 cup sour cream (or yogurt)
- 3 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup jam (traditionally apricot)
- Cream butter and sugar together.
- Mix in eggs, vanilla and sour cream.
- Sift flour, baking powder and salt in.
- Remove a handful of batter, thicken with extra flour to create lattice top.
- Spread batter into greased 9inch pan.
- Spread jam on top.
- Create lattice with reserved dough.
- Brush lattice with extra egg whites.
- Bake at 350 for 50 minutes.
