Pork Carnitas

Optional:

  1. Preheat oven to 300°F
  2. Combine salt, black pepper, red pepper flakes, dried oregano, ground cumin into a small bowl to make a spice mixture
  3. Coat the pork in the spice mixture and place it into a large dutch oven or oven safe pot
  4. Squeeze the oranges and limes into pot and place the spent halfs into the pot around the sides of the pork
  5. Put the chopped garlic and onion on top of the pork
  6. Cover the pot and bake for 1.5 hours
  7. Remove the pot from the oven, and place it on a baking sheet. Using a fork and/or tongs shred teh meet into small pieces.
  8. Ladle ~1 cup of the left over liquid in the pot over the shredded pork
  9. Put the shredded pork in the oven and broil for 8 minutes (or until desired crispyness) flipping half way through
  10. Optional: While the pork is crisping in the oven warm tortillas in a pan on the stove
  11. Optional: Serve pork on tortillas with cilantro, pickled red onion, radish or your favorite condiments
